This chicken sausage flatbread recipe is a quick and easy way to prepare dinner. The base consists of tomato sauce, cheese, and sausage and is then topped with zucchini slices and fresh oregano.

  1. Preheat oven to 500 degrees F. Wash and dry produce.
  2. Trim zucchini into 1/2 inch thick rounds. Pick oregano leaves from stems and discard stems. Roughly chop leaves.
  3. Places zucchini on lightly oiled baking sheet and season with salt, pepper, and 1/2 tsp italian seasoning. Bake in oven (top rack) until browned and softened, 5-7 minutes. Remove sheet from oven, adjust temperature to 450 degrees F.
  4. Heat a drizzle of olive oil in a large pan over medium-high heat. Add sausage and half the oregano. Break up the meat and cook for 4-6 minutes. Turn off heat.
  5. Place flatbreads on a second lightly oiled baking sheet. Toast in oven until lightly browned, 5-7 minutes.
  6. Spread half the crushed tomatoes in a thin layer on toasted flatbreads. Season with salt, pepper, and 1/2 tsp italian seasoning. Top with sausage, zucchini, and mozzarella.
  7. Bake flatbreads until edges are golden brown and cheese has melted, 4-6 minutes.
  8. Sprinkle flatbreads with as much remaining oregano as preferred. Slice into pieces.
