Dan dan noodles is a dish originating from Szechuan cuisine. Its ingredients traditionally include spicy sauce, vegetables, mustard stems, Szechuan pepper, pork, scallions, chili oil, and noodles. Western styles of dan dan noodles sometimes substitute the spicy sauce with peanut butter or sesame paste.

  1. Boil large pot of salted water. Wash and dry produce.
  2. Thinly slice scallions and separate whites from greens. Peel and mince garlic.
  3. Heat drizzle of oil in medium pot over high heat. Add coleslaw mix and cook, stirring constantly, until lightly charred, 1-2 minutes.
  4. Heat drizzle of oil in pot used for cabbage over medium-high heat. Add scallion whites and garlic; cook, stirring occasionally, 20-30 seconds.
  5. Add pork, sesame seeds, and 1/4 tsp salt; cook, breaking up meat into pieces, until browned and cooked through, 5-7 minutes.
  6. Once pork is done, add Szechuan paste and peanut butter; cook, stirring occasionally, until lightly browned and combined, 1-2 minutes.
  7. Stir in pork ramen stock concentrate, chicken stock concentrate, and 2 1/2 cups of water.
  8. Bring to a boil, then reduce heat to low. Cook, stirring occasionally, until slightly thickened, 2-4 minutes.
  9. Season with salt and pepper.
  10. Once salted water is boiling, add noodles to pot. Cook until tender, 1-2 minutes.
  11. Drain noodles and rinse under cold water for 30 seconds.
  12. Divide noodles between bowls, pour broth over noodles and top with charred cabbage. Garnish with scallion greens, sesame seeds, and chili flakes.
